Procrastibaking: Avocado Hype Team

People have been eating Avocado since the dawn of time (give or take a few years), but it seems that recently it has risen to Taylor Swift levels of popularity. Everyone and their mum is putting this delicious fruit in their salads, on their pizza, even on their face! So, I just had to try it out and see if it was worth the hype.
I'd obviously tried it out before, it's on one of my absolute favourite salads at Pizza Express (mentioned in this post). However, I had never tried in a meal where it was the centre of the dish. But oh my wow, I am glad I did!! As breakfast is my favourite meal of the day, I decided it would best to try it out in my morning meal. I mashed up half an avocado and spread it onto some homemade, brown toast, then topped it off with some cherry tomatoes. It was an extremely filling, ridiculously healthy and very photogenic meal, and one that I have had many a time since. The avocado slightly melts onto the warm toast, without making it soggy and the tomatoes add a burst of flavour, as well as extra nutrients. 

This meal has definitely made me want to try more avocado recipes and has confirmed my place in the avocado hype team! Have you tried any avocado based recipes? Share some of your favourites in the comments below.
